While not widely regarded for its meat, Kym and Lindsay Edmunds believe alpaca is a great choice for the health conscious.
In their native South America, alpacas have been a source of meat for many years.
“It is a very healthy option,” Kym said.
“Not many people breed their animals for meat.
“We think it is a great alternative.
“It has very little fat which makes it ideal for those who have heart problems or cholesterol problems.
“We take our animals to the Narromine abattoir where they are butchered.
“When they have been slaughtered, we get a butcher to make sausages and mince from the meat which is very lean.
“We are currently looking into developing a business to sell the sausages and mince.
“At this stage we mainly use the meat for personal consumption – the mince makes a really nice pie.
“I sometimes use some of it in my catering business, but mainly Lindsay and I like to eat it,” she said.
