GET out your rolling pins and put on your apron, the hunt for Australia's best fruit mince tart has kicked off right here in Tamworth.
Open to home cooks and commercial bakeries, FPM Cereal Milling is searching to find the festive dessert with the flakiest pastry and the sweetest filling.
While Christmas is known for gingerbread, trifles and puddings, Business Development Manager Katherine Sherrie said the Tamworth mill wanted to give the humble fruit mince tart its time in the spotlight.
"It's a little bit underappreciated," she said.
To enter the competition keen bakers simply need to drop off or a send their tarts to the Mill, which is located at 1 Showground Road, before December 17.
To determine which tart is best, the festive treats will be judged on flavour, appearance and the pastry.
Ms Sherrie said she was excited to see the innovation and different interpretations of the traditional dessert.
"I know some people this year are doing slow gin spiked fruit mince tarts," she said.
But Ms Sherrie said the competition is all about providing festive cheer.
"We've all felt what it's like to be stuck at home and I know for us, and many people, sharing a festive treat with a loved one is a great way to lift the spirit."
The best performing bakery will take home 1.2 tonnes of premium bakers flour to get through the holidays, while one lucky home baker will add 50 kilograms to their pantry when the winner is announced on December 20.
